Lois' lockdown lemon drizzle

At uncertain times like these, it is necessary for people to be selfless and to consider others. This is why I have taken the decision to share my sacred lemon drizzle cake recipe. Many have said that this is the best cake known to man but I shall leave that up to you to decide.

This cake was a staple of my childhood and I have such fond memories of making this when younger. The recipe was actually passed to my mum by a friend and is known as “Katie’s mother-in-law’s demon drizzle cake”. The recipe has been passed around the many mothers of Suffolk and this cake has been produced countless times for school fetes and charity bake sales.

It is the simplest recipe in the world and produces the most moist and light cake ever. I would like to say that it is my baking skills that make it delicious, but anyone can make this cake!

‘Katie’s mother-in-law’s lemon drizzle cake’

Ingredients

Cake:

· 6 oz unsalted butter

· 6 oz sugar

· 3 eggs

· 6 oz self-raising flour

· Zest of 1 lemon

Drizzle:

· 4 oz sugar

· Juice of 1 lemon

Recipe

1. Preheat oven to 150OC and grease and line a tin

2. Cream together the butter and sugar until light and fluffy

3. Then add the eggs, flour and lemon zest. Mix until well combined

4. Bake for 40 mins until golden (the baking time may vary depending on the thickness of tin)

5. Whilst baking, make the drizzle by mixing the sugar and lemon juice

6. When the cake is just out of the oven, prick the cake with a knife or cake tester several times and pour the drizzle on top

7. Leave to cool in the tin and enjoy!
