Charlotte's week 1 of isolation baking

Hey! I hope everyone is keeping safe and coping (as well as possible) with lock down and social distancing at the moment. We live in such strange and uncertain times. Loads of questions are going through my head… I don’t know about you? As my course has yet to set any online work or assessments, I’m taking this period as an opportunity to relax. Something I rarely get the opportunity to do.


So it got me thinking what is something that I find really relaxing? It’s a pretty easy answer. It has to be baking. A hobby that I haven’t been able to do that much this year due to uni!

You may recognise some of these recipes from the Bake Soc Instagram (cons of being Publicity Officer). But I thought I would give you a run through of what I baked in a week of lockdown. All of the ingredients are stuff that I had in the cupboards luckily (minus the eggs). However, if that’s not the case for you don’t worry there’s loads of alternatives that you can swap in/out for.

Oatmeal and Raisin Cookies:


These are one of my all-time favourite cookies to bake. They’re easy to make, cook fast and last well in a tin. Plus they have fruit and oats in them so perfect for healthy eating.. maybe?

Cheese Scones:


My sister asked me to make these for her because they’re her favourite. In all honesty I’ve never really been a fan. Most of the cheese scones I’ve had/made in the past have been really heavy and dry. To my surprise I think I’ve found a good recipe. They were lovely and light not heavy at all and such a good flavour. Definitely a Cheese Scone convert now. P.S they taste better warmed up or even better straight out of the oven.


Millionaire’s Shortbread:


Fortunately, being at home now means there more people to eat my baked goods. Which gives me the excuse to bake more! Win Win for the whole family. So my last bake of the week was a classic but a good one. Millionaire’s Shortbread. It’s a pretty time-consuming bake but in my experience never disappoints. I decided to make these because I had some condensed milk to use up. If you don’t want to spend ages making the caramel for this, you could always opt for the readymade caramel that you can buy in stores
